I really enjoyed cooking several older recipes from my archives this past week! We made the BBQ Chicken Pizza, Mushroom Garlic Pizza and Hawaiian Chicken Alfredo Pizza for Father's Day at my parents house. My Mom also threw together one with regular pizza sauce, Jimmy Dean Sausage and diced green bell peppers and my Dad said that was his favorite! I am going to revisit a few old ones again this week too.

Fairhope Foodie Menu 6/16
Yes, my friends, another week has come and gone. I remember when I was younger thinking that time went by so slow. "Will I ever turn 16??", "Come on 21!!". Those days have now come and gone and I find myself wondering where I was during all of it!
I really wanted to do a week of all desserts. I kept thinking of cookies, cakes and such that I wanted to make. I do not think my thighs would be grateful for any of that. So I settled just for a few dessert recipes :) Some of the recipes this week are repeats. I wanted to go back and revisit some of them. I'm trying to use up some of my stockpile!

Menu 6/9
Are you ready for another week with the Fairhope Foodie? I've been gone for too long! I just couldn't seem to get my groove back. I must say that it was a much needed break and I'm excited to get back into my schedule. I'm going to play with the Menus the next couple of weeks and see what works. I may cut down on the amount of "new" cooking I do each week and link older recipes as well. We'll see how it goes. For now, let's get on with it!

I will post the recipe and pictures after I make them on the designated day. To make it easier to cook with me, I decided to include a recipe ingredient break-down to make your shopping a bit easier. The items marked with an (*) refer to a sale item this week at Publix. I'm pulling most of this from my stockpile this week because Publix wasn't looking spectacular. I have a great stockpile to work with so I'm using up what I've got. My Menus may not correspond exactly with the sale ad of the week, but its going to be all things (or mostly things) that I've gotten with coupons or sales. I'm very proud of my grocery store deals and I love being able to cook with them.
And don't for get to use my Recipe Index and Archives to find a recipe for an ingredient you have on hand. I am in the process of getting them broken down further to better help you find ingredients. You can also type in a term in the search box in the upper right hand corner to pull up past entries. Sometimes this is a hit-or-miss method though. I've used it searching for recipes that I KNOW are there, and not had any luck finding them. But, it works most of the time :)

Tonight I made Taco Puffs. I changed it up a bit by using the Grands, Jr. biscuits. Because they were smaller I didn't halve them. I also used my makeshift paper town holder and rolled them out instead of using my hands. I had some leftover Spanish Rice so I added that to the bottom of the cups before adding the meat. They were Yum-O!! If you haven't tried them put them on the list. Publix has Grands biscuits on sale this week!

Menu 5/19
Here's to hoping this week I stay on schedule better! Last week I was thrown off schedule working on a Pinkalicious Strawberry Cupcake recipe. After bathing in pink cupcakes for 3 days the final products was awesome. I am looking for the next excuse to make them again! Who's birthday is coming up next? Do you want Pinkalicious Strawberry Cupcakes? Good, because that's what you're getting!
This week looks a little better at Publix, but I'm still pulling from my stockpile. My pantry is overflowing and I've got to start using some of this food in my house! I am going to really try to make this week count in my kitchen because I'm taking the next week off. I'm going to Disney World over Memorial Day weekend with one of my best girlfriends. And the best part is we're going just the two of us! No kids. Just great food and great fun with a great friend! I can't wait! I am planning on journaling my trip and taking all of the food pics and catching you guys up with some Dining Through Disney posts!

I am not really excited about the Publix ad this week. I am going to cook mainly from my stockpile. As most of you know, I usually base my Menu around the Publix weekly sales ad. Menu 5/5
Is it Tuesday already? I wish time went by this fast when I was in high school! The days just seem to flip over one another now. I wish that I didn't require sleep. I would be able to get so many more things done! Just think of how much time we waste sleeping. I love working at night when everyone else is asleep and the house is quiet. I just regret doing it when its time to wake up the next morning! I still have oodles of coupons to organize tonight. I still haven't caught up from when Emme was sick. This may be one of those late nights. I think I may pull my hair out if I have to keep digging through envelopes to find my coupons. Its going to be time to get my Publix trip together for Thursday and these bad boys all have to be in the correct place! Speaking of Publix there are a few good deals going on this week. Nothing spectacular. My family is really excited about the pop-tarts! I wish they would run better deals on the meat. Until the chicken deal last week, I have been visiting other grocery stores to stock my freezer. I think I have still managed to pull together a great menu. Menu 4/28
I really enjoyed getting this week's Menu together! I don't know if the Sneak Peek was really inspiring, or if I just am ready to be back! This week looks really good at Publix. Boneless, skinless chicken breasts are FINALLY on sale again for $1.99 lb. This past week several grocery stores had great deals on chicken. Winn Dixie had good prices on chicken drumsticks and whole chickens, and Bruno's/Food World had the boneless, skinless chicken breasts for $1.98 lb. When chicken breasts go that low I really stock up. I trim each breast of the excess fat and put each one in an individual zippy bag. I then put all of the "zippied" chicken breasts into a large freezer bag. I pull out what I need and thaw in the sink in cold water. I use the boneless, skinless breasts in all of my recipes that call for chicken. Tonight, when I make the Curry Chicken, it will be the first time I have attempted cutting up a whole chicken so wish me luck! The Chicken Tacos were inspired by some tacos that I had this weekend at LuLu's in Gulf Shores. They were fish tacos on the menu, but I substituted chicken instead. I'm not huge on fish, so I didn't want to be disappointed. Chicken is a safe bet for me! When I get that recipe written up I'll break down the ingredients further.

I'm getting a late start on the Menu this week. My brain just won't think. I was having a hard time this week for some reason! I am going out of town this weekend with some girlfriends, but I will be posting some recipes. One that I'm really excited about is the Creamy Peanut Butter Dip! I hope everybody had a wonderful Easter! I had a great time with my family, and the food was FANTASTIC! If you had a chance to make some of the recipes I hope they were as good for you as they were for me. That Oat Topped Sweet Potato Crisp was awesome. Thanks for the recipe Dawn! This week's sale at Publix runs a little longer because of the Easter holiday. I've come up with some recipes this week that are a little bit healthier and use a lot of fresh produce. I have to be in a bathing suit in two weeks...so no more cream cheese!

Easter Brunch Menu
I am really looking forward to Easter on Sunday! We do Easter at my house, and so it is really a chance for me to get to show-off in the kitchen :) The Menu I have planned for this year should be a winner. I have made most of the things before and they are fantastic! I am going to post a pasta dish Thursday for dinner and then I'm going to take some "cereal" nights. I will have SIX recipes to share with you guys for Easter! I thought maybe I would do it a little different if you wanted me to. I usually post the recipes after I make them. Since I've made most of these, I thought I might go ahead and post them in case you would like to add them to your Easter spread. I can add the pictures and any comments after Sunday. Let me know if you would like to see it done that way this week. The recipes are awesome!

Publix had a lot on sale this week to inspire me. Most of the recipes I originally came up with were for desserts. I can't very well do an entire Menu of desserts, so I conceded and put some "real" food on here too! I actually had to narrow my selection down. I had so many that I wanted to make! I'm kind of cooking from the pantry Wednesday, because I won't be able to do my shopping until Thursday evening. The Feta Cheese Chicken should be easy enough to throw together with some Rice-a-Roni.
I said that I was "maybe" going to do the sausage/spaghetti squash dinner tonight. Well, the maybe turned into a "no"! My oldest daughter is spending the night with her YaYa, so we only will have the baby at home. I think its cereal night! I'm going to finally get to sit down and watch a movie during the week!

Menu 3/17
This looks to be a good week at Publix! I sure wish they would start running better sales on their meat though. Everything has been so high these last few weeks. I've been going to Winn Dixie or Bruno's for our meat. I will be going to Allegri's again this week to get some of my produce. And they're ferns are BEAUTIFUL!! I love this time of year. I know when Art and Crafts weekend rolls around in Fairhope, Allegri's will have their gorgeous ferns hanging outside just calling my name! You will notice also that I have have left a couple of days blank next week with the recipes. I am going to start taking some nights off. I am allowing myself some "cereal" nights because I am just too pooped these days to get in my kitchen and cook every night. I am getting burned out. I tend to be an all or nothing kind of gal, and I don't want that to happen with this blog. I REALLY enjoy doing it, so I don't want to burn myself out. I hope that you enjoy the recipes this week. Menu 3/10
I have decided to cook from my pantry this week. There was nothing on sale at Publix that I needed and I see no sense in spending money when I don't have to! I have plenty in my pantry as you saw in my post, so I'm am going to make the most of it and cook dinner this week. I will have to go to the farmers market to get some veggies. Most everything else I have on-hand. I've got some yummy recipes coming this week for you!

The last time I made it I doubled the recipe, so I'm going to cook it Wednesday and post the recipe. We'll enjoy leftovers Thursday, so I wanted to post these great Carrot Muffins that I'll eat for breakfast the rest of the week (these also freeze well). We're having company Friday night, so soup is a great crowd pleaser and very easy to prepare. I've got my daughter's birthday party Saturday, so I'm taking the day off :) I have buttermilk leftover from the Avocado Pound Cake that needs to be used and I LOVE these buttermilk pancakes. Its a copycat recipe of Cracker Barrel's and they're so good! I also have the yellow cornmeal I bought for the pound cake and so I wanted to give polenta a try Sunday night. I am going to Publix to get the Flat-out bread to make the Panini's Monday night. We all have jars of spaghetti sauce stocked up, so Shannon from The Bargain Buggy helped me come up with this one. And I wanted to make use of all of the beans I stocked up on a couple of weeks ago so the White Bean Soup sounded yummy after a Monday at work.

Menu 3/3
Something gets me behind every week. I think I should just start expecting that! I try to get the Menu posted on Tuesdays but that doesn't always work. For those of you who are new to me, I do work full time and I have 2 kids at home (3 years and 6 months). So, blogging doesn't always take first priority. For the most part, I know you guys aren't sitting at home basing your life on my Menus. I am sure the majority of you slept just fine last night without getting a glimpse of it! All joking aside, I am truly grateful for the support of you guys. I feel so blessed to be able to do something like this and share this passion with you. We all have crazy schedules. I am no different than any of you. Although, I do like to think I'm special at times. Too bad, that's just not the case! My girls and I are going out of town this weekend to visit my sister-in-law, Shelley, and her two girls. I cannot wait! I am still planning on cooking and posting some recipes, but if we get tangled up at Target shopping please don't hate me if we eat out instead. Again, I know you're not going to lose sleep over this :)

Publix Sneak Peek 2/24 and Menu
I'm not jumping out of my socks this week like I was last week about the sale at Publix. There are some good deals, but I was really loving that Italian sale last week! Michelle has the Sneak Peek up at I Heart Publix. Be sure to print your shopping list on Publix.com on Wednesday when it becomes available. I always go with that list and it makes navigating around the store so much easier. I will not be doing posts Wednesday or Thursday this week. I've got lots to do Wednesday night, including going to Publix. Thursday night we are going to Clay's parents house to celebrate Ella's 3rd Birthday with the family. We're cooking cheeseburgers, her favorite. I have a really good recipe using Jimmy Dean Sausage, ground beef and cheese. I may go ahead and post it even though the beef and sausage aren't on sale this week. They're really good! I'll resume my normal schedule on Friday.

Menu 2/18
I must admit that it was hard for me to get back into my groove! It was so nice having some time off. The same thing happened around Christmas when I got out of my routine. That's life though. Same thing goes with exercising. Take a couple of days off and you can forget it! I started getting excited though when I was putting the Menu together. I was talking with Shannon last night from The Bargain Buggy and decided that I need to try to cook healthier for my family. Most of the "sale" items are the processed, pre-packaged foods that are not exactly on the good-for-you list. I am going to try to start taking advantage of the good prices at my local farmers market and branch out with my fruits and veggies. My husband will learn to like it! For some of the recipes, I will just try to cut fat and calories where I can by using light ingredients. If none exist for that particular recipe, I will cook it like I always do and enjoy it! I think that we should enjoy all things in moderation. If I tell myself I'm on a "diet" it makes me want cheesecake that much more! I try to eat and snack smart during the day so I can enjoy a nice dinner when I get home. Sometimes that works, and sometimes that doesn't. We'll see how it goes!

As you can tell, I am having chicken withdrawals! I don't think I've cooked with it a whole lot lately and I have some in my freezer. Plus, its healthy. You could certainly use grilled pork chops with the sweet potatoes and cauliflower on Sunday. I am craving freshness, so those two things will be coming from my local farmers market this week.

Publix Sneak Peek 2/3 and Menu
I apologize for this being so late! I've been busy these last couple of days and my schedule has been a little off. Michelle has the ad and match-ups available on I Heart Publix. This is such a time saver. She has done 80% of the work for us. Remember to print your coupons soon because some of them won't be available for long. This is a GREAT week at Publix. I'm sure most stores are running great deals this week with the Super Bowl coming up Sunday. Go Saints! (That would make my husband very proud!) Publix Sneak Peek 1/20 and Menu

I hope everyone had a great New Year and has made the transition back to the Real World! Yep, the Holidays are over. Very bittersweet. But, I started the New Year off right. We organized and cleaned the house and I found time to get back into my kitchen. YAY! I am making it a point to stay on top of my coupons and really search out the deals. I am also in the process of creating a spreadsheet to keep up with our expenses. I know I'm saving money, but I want to know how much.
